Mushroom Carnitas

It shouldn’t come as a surprise that I chose mushrooms as the alternative here. They’re easy to tear and shred and can soak up a ton of flavor through the traditional style of preparing carnitas. Carnitas are traditionally cooked in their own fat (lard). Here, I followed that same technique and cooked them slowly in a neutral oil then fried them up to serve with that same oil. FLAVOR EXPLOSION.
