Crispy cauliflower with saffron aioli. I initially tried to recreate a crispy rice situation with cauliflower, following a @hwoo.lee recipe, but after some testing I ultimately needed to add in flax eggs as a binder. The outcome resulted in a little fritter with a similar visual and crisp texture to a falafel.
